Description
Red potatoes have a low starch content so they hold their shape after cooking and are great for making potato salads, scalloped potatoes, soups and chowders, or for pan-frying. (1 pound of potatoes equals 4 cups diced or 1-3/4 cups mashed.) Potatoes are a good source of vitamin C, potassium, fiber (in the skin), vitamin B6 and protein. They contain one of the highest antioxidant levels of all vegetables. Store in a cool, dark, dry, well-ventilated place. They should not be refrigerated, and should not be exposed to direct sunlight, which turns them green and makes them bitter.
