Description
This is a firm, greek style cheese made with 100% Irish goat milk. It is pure white in colour with no moulds or skin. The texture of the cheese should be firm and smooth with small holes. As it is matured in brine, the taste should be creamy and mildy goaty with a salty bite. The cheese keeps its shape well and is suitable for a variety of salads and sandwiches.
